Vietnamese Chicken Soup

Vietnamese Chicken Soup


 

INGREDIENTS

Lemongrass
Ginger
Garlic
Coriander
Chili
1L Chicken stock
Fish Sauce
Soy Sauce
4 Limes
500g Chicken thigh diced
Leek
Bok Choy
Cabbage

METHOD
Place herbs/spices to taste in a pot with oil and sauté when fragrant add diced chicken to seal. Once chicken is sealed add in the chicken stock and bring to boil. Top pot with boiling water to about ¾ and cook chicken through.
Add fish sauce and soy sauce (to taste – also add extra herbs if you like)

Chop Leek, Cabbage and Bok Choy to small “soup” / “spoon” bits add to pot – cook until wilted. Add limes to taste.

Serve with fresh coriander / chili and lime wedge & homemade garlic bread
