Fig & Prosciutto with Goats Cheese Salad
1/2 packet rocket
1/2 packet baby spinach
1 bunch basil
12 ripe figs
100 -150g prosciutto
100g goats cheese (South Cape located in Woolworths is great)
4 tablespoon honey
6 tablespoon olive oil
Salt & Pepper to taste
Finely chop about 1/4 bunch of the basil – whisk with honey and olive oil – season to taste (note prosciutto is quite salty so don’t overdo it) place aside.
Place rocket and baby spinach on serving plate with remainder of basil (leaves only). Tear prosciutto goats cheese into bite size pieces and place over the greens. Quarter figs and arrange on plate.
Drizzle with homemade dressing and add salt and pepper to taste.
